This has been a mast year for green beans! I've made this recipe in the past using roasted red peppers. A few days ago, right after I made the red pepper powder, I decided to make it using that powder, and it was both delicious and easy so I'm sharing it here. I served it with Chapli Kebab and basmati rice. My husband had three servings!
Green Beans in Garlic Red Pepper Sauce
INSTRUCTIONS:
- 1 pound green beans, trimmed
- 2 t. butter or ghee
- 1 garlic clove grated on a microplane
- 1 T. red bell pepper powder
- 1/2 t. hot pepper powder (optional)
- 1/4 cup cream
- 1/2 t. himalayan pink salt
INSTRUCTIONS:
- Cook the beans in boiling salted water for 7 minutes (any longer and they will lose their green color)
- Drain using a colander.
- In the pot where you cooked the beans, melt the butter or ghee over medium heat.
- Add the garlic and stir until fragrant.
- Add the pepper powder(s) and allow to hydrate in the fat for a minutes or two.
- Stir in the cream and bring to a simmer, stirring to incorporate the pepper. (Add additional cream if you prefer a more creamy sauce)
- Add the beans back to the pot and stir into the cream.
- Taste and adjust seasoning.
