I don't know why I never thought of this before! These were out-of-this-world delicious!
(I have also made croissant breadcrumbs*, which are better (and healthier) than Panko!)
Croissant Croutons
serves 2-4
INGREDIENTS:
- two old croissants - I used one that was 3 days old and one that was 12 days old!
- 2 T. ghee, melted
- Seasoning:
- salt and paprika to taste
- OR
- salt and garlic powder
- OR
- salt and dried Italian seasoning
- OR
- whatever seasoning works with the salad you're serving
- OR
- just salt...I think they need to be salted...
INSTRUCTIONS:
Preheat a toaster oven to 325F
Slice the croissants horizontally into 4 slabs
Slice each slab into 3/8" cubes

Transfer to a toaster oven tray and drizzle with the ghee. Toss with your hands to distribute it evenly.
Sprinkle with salt and paprika.

Bake for 7-8 minutes.

*NOTE: to make croissant breadcrumbs, just grind up old croissants in a processor or blender! Blender supposedly makes more uniform crumbs. If they aren't hard enough, dry them in a 200F oven for about 15 minutes. You can toast them in a 300F oven afterwards if you want.
